The best pizzas I've had are since I've gone vegan! I'm with you, the from scratch method is definitely the way to go - even though it's time consuming, there's something so satisfying about it. If i'm feeling REALLY crazy, not only do I make the dough and sauce, but I'll make pesto and/or cashew cheese for the top. Once I even made my own mozzarella for it! It's a full day job haha.
I've never made vegan cheese before but that's really impressive! I don't know that my blender would be able to handle cashews (it barely handles carrots) but if I ever get a good blender it's one of the first things on my list :-P
Do you have a coffee grinder? I have a Krups one (I think it was around £20) which I use for coffee and spices but I also have a little trick up my sleeve for when I make cashew cheese...I blend the cashews in the coffee grinder first before putting them in a blender or food processor! I find that it makes them all finely ground and does most of the hard work, so even cheaper blenders can handle it.
Yum, I love homemade crust! It's definitely so much better! And now that I've had it, I can't really seem to go back to the premade stuff unless I'm really in a hurry. I just know it doesn't taste as good as the homemade!
